Mi 11 Ultra will be upgraded to MIUI12.5 development today. The stable version will be released by the end of the month.
Xiaomi previously announced that the stable version of MIUI 12.5 will be released in full volume on April 30, 2021. The first instalments include the Mi 11, Mi 10, Mi 10 Pro, Mi 10 Ultimate Edition and Mi 9 SE. Currently, only the Mi 9 SE has not been released.
According to igeekphone, the stable version of MIUI 12.5 of the Mi 11 Ultimate Edition was set in the second batch and will not be pushed until the end of May, which may now be intentional.

It is reported, the second batch of models includes the Mi 11 Ultra, Mi 11 Pro, Redmi K40 Pro, Mi 10S, Redmi K40, Redmi K30 Pro, Redmi K30 5G, Redmi K30i 5G, Mi 10 Youth 5G, and Redmi K30 Supreme Commemorative Edition, REDMI 10X, REDMI10X PRO, REDMI K30s Supreme Commemorative Edition, REDMI Note 9 PRO, REDMI CC9 PRO, REDMI Note 9, Xiaomi mi CC9, Xiaomi mi CC9 Meitu customized version, REDMI Note 8 Pro, Xiaomi mi 9, Redmi K20 Pro, Xiaomi mi 9 Pro 5G.
